This is a Pétillant Naturel (PET-NAT), a naturally sparkling wine. It is bottled before fermentation is complete, creating natural bubbles during aging.

Limited production with only 1500 bottles available.
Tasting notes: Lychee flavors, persistent aftertaste with sweet notes of residual sugar.

Manufacturing method:

Fermentation with indigenous yeasts, non-certified organic cultivation with minimum sulphites at bottling. No filtration. Matured in bottles without without malolactic fermentation. Pneumatic press with light pressure and transferred to stainless steel, fermentation lasted 2.5 weeks at 10-15 degrees controlled temperature. Before fermentation ends, transferred to bottle and aged for 5 months.
